With chia seeds and any fresh or frozen fruit, jams can be made in as little as 10 minutes! And, are typically more nutritious than canned or store-bought jams.
Chia seeds are a great source of Omega-3 fatty acids, the ‘healthy’ fat. They also pack a nice punch of fiber and protein. They come in both black or white color. There’s no significant difference in taste, so it becomes a choice of how the final dish will be affected by the color. They naturally "gel" when combined with liquid, creating the gelled, or jelly effect to the jam. No gelatin or pectin needed.
Lemon juice is a natural preservative and helps the jam last for weeks in the refrigerator, if stored in glass with a good-fitting lid.
When I was growing up, I’d put peanut-butter and jam on anything, to get as close as I could to a “dessert” while not upsetting my parents. My favorite application of PB&J was on graham crackers. Today, my healthier version is to use this chia jam on top of Sun Butter, and gluten free graham crackers. It’s so simple but it truly tastes like dessert, and brings me back to childhood. I’m sure you (and your kids) will love it, too!
