Roasted beets, quinoa, and walnuts are combined with a sprinkle of sunflower seeds in this hearty patty, which is conveniently oven-baked. It's both freezable and grillable!


The flavors are earthy due to the beets, complemented by a touch of smokiness from the paprika. The texture is tender and supple, offering a slight chew with each bite. Pair it with Jalapeno Macadamia Nut Spread for a cheesy kick, and a sprinkle of Kale Chips for a light crunch. Layer between gluten-free buns for a completely gluten-free burger!

Although beets are only low-FODMAP in limited amounts, these Beet Burgers do not contain the usual veggie burger FODMAPs like onion, garlic, legumes, and wheat. Instead, they are filled with gut-friendly ingredients such as quinoa, heart-healthy walnuts and oats, and a touch of garlic-infused olive oil and green onion for added flavor. These are a great burger to try while in FODMAP transition, when you want to add limited amounts of FODMAPs to re-build your microbiome.

Prepare these burgers in advance, freeze them individually in freezer sandwich bags, and then simply thaw before grilling. While beets are technically a winter vegetable, these burgers are fully prepared indoors, making them a wonderful winter meal when you're looking for an alternative to soups and casseroles.


Pair with Potato Salad, Best Macaroni Salad, Rainbow Salad, Caesar Salad, Mexican Street Corn Salad, or any creamy based salad, along with a nice big green salad.
