Everyone has heard of hot artichoke dip, popular at Autumn and Holiday parties.  But, what about a cold Vegan Artichoke Spread for sandwich fillings?  Not much different, really, but makes a wonderful alternative to a hot dip as a new twist on tradition for summer.  No cooking involved!  No fatty mayonnaise or cheese needed; no dairy at all.  This spread utilizes whole food healthy nuts and seeds to create the creamy base.

Artichoke Spread is the most delicious sandwich filling ever!  It is also vegan, soy-free, and gluten-free, a great source of fiber and protein. Great between 2 slices gluten-free bread or in a wrap.  Add some of your favorite sprouts, maybe a slice of tomato or some lettuce leaves.  You might even throw in a layer of No Bean Hummus.  Equally delicious as a topping to crackers, rice cakes, or cucumber slices for an appetizer or snack or a bring-along to a summer picnic or potluck.

Soaking your nuts:  There can be a few reasons to soak nuts before consuming them.  Soaking nuts is a traditional practice said to improve absorption and digestion, however there is not much evidence to substantiate a significant difference.  Some say soaking releases or activates enzymes in nuts, making their antioxidants more bioavailable, but there also is little evidence to prove this.  Here, we soak nuts to soften them, making the skins easier to remove and resulting in a smoother, creamier texture as the base for our spread.  If any additional nutritional benefits exist, then it’s a win-win!

Artichoke hearts are low fat, high in fiber, folate, and vitamin C, plus rich in magnesium, phosphorus and potassium, and a number of antioxidants.  Great as they are, artichokes are NOT low-FODMAP, so if you’re watching those, go low and slow until you know how much your body can tolerate.  Almonds are a great source of plant-based protein and healthy fats and fiber, plus vitamin E and antioxidants, soaked or not soaked.

I made this artichoke recipe today and it's absolutely scrumptious! I had to use a smidge of garlic powder mixed with plain olive oil because I didn't have garlic-infused oil but straight garlic doesn't bother my digestion. Also, I used canned artichokes (in water, not oil). Turned out great! I ate this as a sandwich on sourdough bread. Highly recommend!
