Like the popular candy, but without the guilt! These Sun Butter Protein Cups use Sun Butter, or sunflower seed butter, which is like peanut butter using seeds instead of nuts and is a great substitute for those who are allergic to peanuts. With a dark chocolatey coating and a few white chocolate chips thrown in, you get that fantastic candy sensation, but wait for it: These Sun Butter Protein Cups have 10 grams of protein per candy piece. You won't get that at in the candy aisle!

The texture of these Sun Butter Protein Cups mimics candy with it's soft, almost powdery, melt-in-your-mouth texture, nutty flavor, sweet from a combination of maple syrup and lightly sweetened protein powder. I prefer stevia sweetened protein powder so I can reduce the amount of sugar added, however I don't like pure stevia flavor and find the combination of maple syrup and a little bit of stevia are a great combination in these bites. Sun Warrior, Warrior Blend Vanilla protein powder is perfect for this recipe.



Using muffin pan and liners makes these the perfect size, 10+ grams of protein per bite, and the liners also make them easy to grab and take to work, throw one in your lunch for a protein-boosted "dessert" or midday snack. It takes a couple extra minutes to prepare the individual cups, but is well worth the effort once you have 12 cups in the fridge ready to grab and devour!

I had mini vegan white chocolate chips on hand, which was a pleasant release this year by Enjoy Life brand, so I threw a few into the dough for a bit of extra crunch and sweetness in the nutty filling, however you can use dark chocolate chips if you prefer, or you can skip them completely! I really love the little white chunks, however. When you hit them, it's like a little burst of sweet vanilla releases on your taste buds.

FODMAPs will depend on ingredients you choose. Sun Butter, almond butter, or peanut butter will all be FODMAP-friendly. Check your protein powder for ingredients that trigger you. Coconut flour is not low FODMAP, but you can sub for oat flour if you wish. The amount of coconut used is small and doesn't affect my gut, but yours may be different.
