These Vegan Pesto Pinwheels make a great yummy party appetizer and due to the use of frozen puff pastry, they're quick, easy, and customizable! I threw in a bit of broccoli, spinach, sun-dried tomatoes along with vegan cheese shreds, and they remind me of little pizza wheels. Of course, I don't eat meat, so that flavor wasn't missing for me. But, you could also chop up some vegan pepperoni or 'beef' or use different veggies, too! Or, use just pesto and vegan cheese and they'd be perfectly delectable little snacks.

Puff pastry is what we call "accidentally vegan", meaning, they didn't make it specifically for vegans, but rather used vegetable fats instead of animal fats simply because they're cheaper, and the result is this frozen vegan baking shortcut! Not all puff pastry is vegan, so check ingredients. There are typically 2 sheets in each package of frozen puff pastry. I used only one for this recipe, but you could easily double it, and maybe concoct two different fillings so you serve a variety of pinwheels. Maybe make one simple, like pesto and cheese and another one like broccoli, spinach, and sun-dried tomato.



Puff pastry defrosts easily, in about 20 minutes. It's very easy to work with, and it's a foolproof way to get light, flaky pastry that bakes up to a golden buttery flavor. Just thaw, unroll, add fillings, as if on a pizza, then roll up like you would cinnamon rolls. Slice into pinwheels, place on a baking sheet and bake 15-20 minutes. Voilà!

Perfect for entertaining! These make cool-looking appetizers for a holiday party, appealing to kids and adults both, great for a cocktail get-together, or my favorite: Super Bowl Sunday. You've got to have finger-foods for the big game and these are perfectly sized nibbles that you can also hide some veggies in, between the buttery, light and flaky layers.

FODMAPs: While these pinwheels are dairy-free, they are not wheat-free. Therefore, they are not low-FODMAP (nor are they gluten-free). They are entirely animal-free.
