Sometimes I can nail a new recipe on my first try, but often I need a couple of tries before I'm satisfied with the flavor and textures. I've now made Orange Streusel Muffins three times and this is it! I made this last batch while a friend was in town visiting and her comment was "these are goooooood!" And, I concur. This is the best version of this recipe yet and I couldn't wait to share it with you all. Deliciously citrusy from the orange zest and juice, soft and very moist all while being vegan, gluten-free, and low-FODMAP.
Orange Streusel Muffins are moist, bursting with orange flavor, free of gluten, dairy, and have a touch of added fiber from the flaxseeds. If you don't devour them all while they are still warm they're freezer-friendly! So, you can make a dozen, eat one or two and freeze the rest to have them hand for extra-busy days. 30 seconds per muffin in a microwave from frozen will return it to that nice, warm, moist and fresh from the oven flavor!
Ingredients are all FODMAP-friendly, so go ahead and indulge!
