Pineapple Frangipane, Vegan, Gluten-Free

Frangipane, a traditional French almond custard is a perfect vehicle for a gluten-free dessert, so we went all the way and made it vegan, too for this Pineapple Frangipane Vegan Gluten-free tart. Pineapple is a delicious tart-sweet fruit that complements the almond perfectly. The crust is supple tender and flaky; the filling is perfectly moist with a creamy melt-in-your mouth sensation. The almond flavor is natural and just perfect - no overwhelming fake flavorings.
When pineapple is in season, it's sweet and juicy at its peak, and is a wallet-saver compared to out of season prices. Pineapple also contains natural digestive enzymes and can be anti-inflammatory. So, take advantage! Of course, if it is not pineapple season when you make this, you can substitute another fruit. My strawberry garnish makes me want to try a full strawberry frangipane tart.
