Throughout the summer, I've been creating refined sugar-free versions of my Breakfast Protein Cookies after deciding to try eliminating all simple sugars from my diet. The original recipe is already nutritious, featuring nuts, seeds, and oats. However, it includes coconut sugar and ingredients like mini chocolate chips and dried cranberries, both of which contain added refined sugar. I went a step further in this recipe by removing all ingredients with refined sugar. Since I keep making these cookies repeatedly, I felt it was time to share this version of my recipe, Refined Sugar-Free Oatmeal Cookies.

These make a fantastic energy snack suitable for everyone, especially those with diabetes or anyone looking to reduce refined sugar intake. Instead of coconut sugar, I used mashed banana. I found unsweetened dried cranberries at Whole Foods, and chose to leave out the chocolate chips. Pecans and hemp seeds provide protein and fiber, aiding digestion and helping you stay full longer.

Refined Sugar-Free Oatmeal Cookies are incredibly simple to prepare and freeze effectively. Make them over the weekend, store them in a freezer bag, and then grab a few cookies in the morning to take to work, workouts, or whenever you're on the go without time for a meal.

Note on FODMAPs: the ingredients in this recipe are low-FODMAP in the quantities used. Use a banana without brown spots to stay low-FODMAP.
