One of my favorite things to do while I travel is seek out plant-based restaurants and try things that might be a little different to me. On a recent trip down under, I was delighted by the phrase “smashed avocado,” which I found to be basically the same as what we call “avocado toast” in the states. While avocado toast is not likely to go away, it’s often a big glob of avocado on a piece of bread, with a small garnish resulting in too much avocado and wheat for my belly. While in Australia and New Zealand, I found the use of sweet potato rösti (hash browns) almost as common as the traditional bread toast.
Making Rösti, hash browns, or other veggie patties requires a binder to hold the shreds of vegetables together while cooking. My new favorite plant-based binder comes from Brightside Organics™ product called Natura Fiber™. Full of flax, psyllium and other ingredients that support gut health, it gels up better than flax alone, making it a great way to add fiber while holding those patties together in a beautiful shape!
To serve Sweet Potato Rösti (hash brown patties), make them the center of attention with avocado being used only as a garnish. I piled on steamed spinach, 1/4 of an avocado smashed with lemon juice, a generous mound of Microgreens, and a sprinkle each of hemp hearts and aleppo pepper. Play around with a variety of toppings! If you eat dairy, try a poached egg and goat cheese crumbles, over braised kale and the Sweet Potato Rösti.
