I often hear that when people consider a vegan lifestyle, the "one thing they can't live without" is cheese. In my journey of eliminating animal products, the thing I struggled with was bacon. Walking by a greasy spoon and smelling bacon grease wafting outside, I'd take those long inhalations, mouth watering, then make another trip to the grocery to search, yet again, for a plant-based bacon that actually resembled the crispy edges, chewy middle, smoky-salty-sweet flavors of bacon. Note, I'm still searching. I don't like any of them for one reason or another. Luckily, after years of being disappointed, the smell of the animal version is no longer a tease for me.


When I first discovered that I could easily make Coconut Bacon with only a few ingredients, I started making this part of my reporatoire. While this doesn't create a 6" strip that you can pick up and bite into, this recipe DOES replicate the flavors and the crisp + chew of bacon and makes a perfect substitute for bacon bits. It's so irresistible, you will probably find yourself unable to stop eating this directly from the pan!

This Coconut Bacon recipe is animal-friendly and a much healthier way to get that smoky, crispy, salty bite than animal-based bacon.  Coconut Bacon can be used anywhere you might normally desire bacon:  on top of scrambles, inside BLT’s, crumbled on top of salads, garnish for soups, maple glazed desserts and other dishes.


Using gluten-free tamari makes this a gluten-free treat, too, or to go gluten / soy-free, use Coconut Aminos instead of tamari.  Be sure to buy the large flake coconut and not regular shredded coconut that you might use in cookies.


These can be frozen in freezer bags for several months.  Pull out just what you need — no need to thaw first!

Coconut is low-FODMAP up to 1/2 cup or 1 ounce, so you should be able to easily enjoy as a garnish. One serving of this Coconut Bacon is calculated at 1/4 cup.
