Crispy Baked Tacos de Papa, or mashed potato tacos in a crunchy shell.  Sound weird?  My favorite enchiladas are mashed potato enchiladas.  And, one day I visited a vegan restaurant in Costa Mesa, called Seabirds, and one of their most popular dishes is their purple potato taquitos.  I had to try them!  And, they’re a winner, for sure!  Another experience, I visited Tacotarian, a vegan taqueria, where they have a taco filled with mashed potatoes.  So good!  So, if you’re plant-based, mashed potatoes in your Mexican fare is not so unusual, really!  I’m here for it!  You with me? It does sort of bother me to have a starch stuffed within a starch, so I added a Beyond Beef ‘meat’ with the potatoes for a protein hit.  In a way, it’s like Cottage Pie in a Taco! Completely vegan.


This is one of the most kid-friendly (and adult-friendly) taco I could come up with.  It’s kind of junky, actually, but has no animal products, no deep frying, and all spices are mild.  I threw a healthy dose of spinach in there to hide some antioxidant-powered greens, but if your kids are "that picky", skip the spinach.  Crispy Baked Tacos de Papa may become your kids favorite dinner!  Crunchy taco shells were my favorite as a kid.  In fact, I didn’t know any other kind of taco wrap.  They were all crunchy in my house!  Nowadays, I prefer freshly made corn tortillas, and I even play with making my own sometimes.  But once in a while, we all just crave something crunchy to contrast with soft, gooey fillings.  This is it!

Fabulous dipped in my Vegan White Jalapeño Sauce!  Give each guest a mini dipping saucer with the sauce.  I also love to serve Easy Roasted Salsa and guacamole on the side with these tacos. These tacos also keep well in the refrigerator, needing only to be reheated on an un-greased skillet for a few minutes per side.


There are no added FODMAPs in these tacos, meaning no specified garlic, onion, or other fructans. Depending on the ingredients you select for your 'beef' and chili powders, you may be adding garlic, onion, or wheat unintentionally. Watch the ingredients lists; otherwise these tacos are perfectly low-FODMAP.
