
This bread is magical and has changed my life! Flourless Power Bread is not your standard yeast risen lofty light bread. Instead, it's dense, flourless, filled with seeds, nuts, and whole rolled oats to give it lots of chew, lots of nutty flavor, plenty of fiber, a huge dose of protein, plus lots of healthy fats. And it's actually really easy to make. No kneading, no rising, nothing tricky. Absolutely delicious with a smear of vegan butter and your favorite chia jam. I love it with Blueberry Chia Jam.

Since this bread is flourless, also egg-free (because it's vegan), a good binder is needed to hold everything together. I use a combination of ground flaxseed and Natura Fiber. I always have a bag of ground flaxseed in my fridge to use in baking as "flax eggs". It gels nicely when mixed with water. Flaxseed provides protein, fiber, omega-3 fatty acids, and several vitamins and minerals. Flaxseed may help lower the risk of some cancers, maintain a moderate weight, and reduce cholesterol and blood pressure.
The folks at Natura Fiber have created a great blend of gut-friendly ingredients to provide lots of fiber in a gentle manner, without pharmacy. I love, love, love their product! It contains flaxseed, with psyllium husk and other gut-supporting ingredients. For Flourless Power Bread, you can also use psyllium powder instead of Natura Fiber.


FODMAPs: Since this bread is mostly seeds and nuts with lots of fiber, it is not low-FODMAP. However, it is gluten-free and about half of it is oats, so you may be able to enjoy 1/2 a slice. The abundance of fiber in this bread helps feed the microbiome making it stronger, so if you're in the reintroduction phase of the FODMAP diet, this could be a great bread to add in once a day. If you're feeling a little sluggish in the gut, this is a great way to get things moving!
