Here's another "not" egg recipe with another source of plant-based protein, coming from JUST Eggs, a product which comes packaged in an easy-to-pour carton, usually near the chicken eggs in the refrigerator section of the grocery store. The protein source is mung beans; the same beans that when sprouted become what we commonly know as "bean sprouts", often seen fresh on top of Pad Thai, and other Asian dishes. Benefits, other than not harming any animals, is that JUST Eggs are cholesterol-free and saturated fat-free, plus supply 5 grams of protein per serving. Each of these little JUST Egg Muffins has around 7 grams of protein each. Plus, with the added veggies, there are additional vitamins and minerals added from the fresh whole foods.
JUST Egg is really great in a frittata, but I wanted something portable and freezable, that could work for my summer road trip. Muffin tins are the perfect answer! JUST Egg Muffins turned out amazing and keep in the refrigerator for consumption throughout the week, or frozen in a zippered freezer bag. They'll be perfect for hauling in our cooler and when thawed, a couple of these will make a perfect breakfast on-the-go, with a little avocado smeared on top.
It can be a challenge to find protein-rich foods for breakfast on a plant-based diet, especially portable, great on-the-go solutions. I love that these are not only portable, but also delicious, vegan, protein-rich, and gluten-free. Reheat from frozen for 30 seconds per muffin in the microwave.
Are they FODMAP-friendly? Well, sad to say that JUST egg ingredients list onion in their ingredients, so if Fructans are on your list of troublesome foods, then no these are not low-FODMAP. Additionally, we can't be sure of the mung bean content. Although it is listed as protein (which is not a FODMAP), it comes from legumes, which means there could be some GOS in the final product. I did not add in any additional FODMAPs to the recipe, so it may or may not work for you, given loads and where you are in your process of reintroduction.
