Instead of the usual ricotta cheese, Loaded Veggie Lasagna features a delightful tofu ricotta, crafted to mimic the creamy texture and taste of traditional cheese while providing a healthy dose of plant-based protein. I must confess, I was initially hesitant about substituting tofu for ricotta (despite my love for tofu!), but the result is incredibly creamy and melty. It is fabulous! The tofu is blended with nutritional yeast, spinach, and fresh basil, creating a flavorful and satisfying filling that complements the other ingredients beautifully.

Simplify the process by making the Tofu Spinach Ricotta and the Tomato-'meat' sauce a day ahead!

Layer the lasagna: Sauce, noodles, sauce, zucchini, noodles, ricotta, eggplant, noodles, tomatoes, mozzarella, noodles, sauce and mozzarella. At the end of the day, it doesn't really matter what order you layer things. It's all laid out in the recipe, below.

FODMAPs: By using gluten-free noodles to avoid the fructans in wheat and preparing the sauce from scratch, this recipe remains low-FODMAP. Generous amounts of garlic-infused olive oil are used in all layers to spread the garlic aroma throughout. The vegetables are safe options. Tomato sauce can have higher fructose levels, so if you're sensitive to fructose, keep your portions small. Check the ingredients of your vegan sausage for garlic or onion, or you can omit the sausage entirely for a completely vegetable-based lasagna.
