Spring is the season for carrots and it’s also an awaking of our bodies to a more vibrant phase.  For me, the warm weather means the onset of smoothie season and by making smoothies with a healthy plant-based protein source, along with healthy fats and all the natural fiber, a smoothie becomes a full meal replacement, satiating my body for hours.


I love playing with smoothie flavor ideas, and this Carrot Cake Protein Smoothie incorporates the best parts of a carrot cake:  the carrots, coconut, pineapple, and walnuts.  Along with protein powder, chia seeds, the spices, and optional spinach, this smoothie becomes a complete nutritious meal all made in a blender. Vegan, gluten-free, full of flavor.
