For the second taco in my series, I went Al Pastor, which in Mexican cooking means pulled pork seasoned with chili peppers and pineapple. Of course, I don't eat pork, so went with the vegan ingredient with the "shredded" meat texture, jackfruit. Jackfruit grows in tropical regions, and can be picked and canned "young" so that it has not developed its sugars, and best of all it has a natural shredding texture and absorbs and holds any seasoning you put on it, making it a great vehicle for vegan savory dishes. It's low in fat, and low in FODMAPs.
Pulled Jackfruit Tacos Al Pastor, Vegan GF are a medium-spicy taco accented by sweet-tart Pineapple Salsa and Cilantro-Lime Crema. Add a slice of avocado and these tacos are complete. You can keep loading them with other fillings, but you don't need to! Celebrate the Al Pastor flavors in the Jackfruit. Try it on small, street-sized tortillas, or a jicama taco shell for a fun-sized taco bites.
FODMAPs: Jackfruit is low-FODMAP, but the Al Pastor sauce is not low-FODMAP due to its many chilies and annatto seed content. If you are watching FODMAP content, proceed carefully with Al Pastor.
Build a taco bar! It can involve some preparation, but everybody loves making their own tacos! With a taco bar, you can provide many options to suit everyone at the table.

corn or flour tortillas
hard shell corn tortillas
jicama slices
lettuce wraps
A slaw - (these are not usually included in authentic Mexican tacos, but are kind of an American staple in tacos)
shredded cabbage
shredded lettuce
mix-ins like cilantro, shredded carrots
A 'meat' -
Pulled Jackfruit Al Pastor (below)
Tofu Scramble
Sunflower Haché
Sunflower Seed Refried 'no-Beans'
mashed potatoes
fried avocado slices
A cheese -
Vegan shreds (store-bought)
A sauce (or three!) -
Accoutrements -
sliced avocado
sliced limes (to squeeze)
cilantro
sliced black olives
sliced jalapeños (fresh or pickled)
