Pumpkin season has returned! But, any time of year is pumpkin season in my book. This is a super fast and simple recipe that will have you dreaming of Thanksgiving dishes. Pumpkin Pie Overnight Oats, Vegan takes the delicious flavors of pumpkin pie and combines it with overnight oats for a delicious breakfast waiting in your refrigerator when you wake! It's naturally vegan, gluten-free, AND low-FODMAP, not to mention full of nutrition!


What exactly are "overnight oats?" Similar to European Muesli, overnight oats are any combination of uncooked oats with fruit, nuts, milk or sometimes yogurt. You put ingredients together in a jar, shake or stir, then refrigerate overnight. The oats soak up all the liquids and the result is a soft yet chewy breakfast pudding. Super convenient because you can get up in the morning and breakfast is ready for you! You just need to remember to prep them the night before, which takes literally less than 5 minutes. Instead of a hot bowl of oatmeal, this is great cold straight out of the refrigerator, but you can warm them up in the microwave if you prefer.

Pumpkin is full of vitamins, minerals, antioxidants and gut-healthy fiber, contributing to our microbiome health. So, adding pumpkin puree into oats makes sense for a healthy and filling breakfast. But, the true benefit it how delicious Pumpkin Pie Overnight Oats are! And you'll never notice they are completely vegan.

Oats contain gut-healthy soluble fiber, and can help lower cholesterol and balance blood sugar. Oats are a naturally gluten-free plant, however they are often grown and/or processed near wheat and other gluten-containing grains, so if required be sure to buy certified gluten-free oats. One half-cup serving of rolled oats are low-FODMAP. Avoid quick-cooking oats.


Mini chocolate chips are optional in Pumpkin Pie Overnight Oats, but I love the tiny bit of soft texture and hint of chocolate depth they add to the oats. If you're really digging that, try sprinkling a few extras on top when serving, too!
