
Fantastic soup for a January (or anytime) dietary reset. Such a wonderful hearty delicious soup, complete with greens and a plant-provided protein! Great flavors of a Thai Red Curry, but without all the fat from the coconut milk, this is a lean stew full of incredible flavor. Red Curry Sweet Potato, Kale and Lentil Soup is also incredibly easy to make, and uses only a few ingredients.

Red Curry Sweet Potato, Kale and Lentil Soup is well-rounded due to the inclusion of brown lentils for lean protein and kale to further increase intake of fiber with the goodness and nutrition of dark leafy greens. Sweet potatoes are highly satiating with their sweet creamy texture, yet they have a lower GI (glucose indicator) than regular potatoes, making them blood-sugar friendly and giving you sustained energy. This soup is light on calories, but heavy on taste and satiety! Perfect for diet-resetting and detoxification.
Red Curry Paste from Thai Kitchen is a good choice if you’re not hyper-sensitive to garlic. It is vegan and gluten-free, non-GMO, all the things. But it does have garlic and shallots in it. I use it in my soup because I’m limiting or eliminating garlic and onions in other ways and it’s good for re-introduction in small amounts. It’s never good to fully eliminate a healthy food such as garlic entirely or forever. For a truly low-FODMAP soup, you can instead use lemongrass powder and ground red pepper and increase ginger root to replicate flavors.
