These Super Seedy Power Scones are magically vegan and gluten-free, but you'll never guess it when you taste them!  The vegan yogurt and coconut oil contribute directly to the nicely moist, yet light and airy crumb texture.  Plus, the scones are filled with power-punching seeds and nuts for long-lasting energy hours after consuming.  The mini chocolate chips give them that familiar dessert-like pastry indulgence that we’ve come to expect from baked treats.  Be sure to use mini chips to match the size and texture of the seeds without overwhelming any particular bite with chocolate.  A huge part of the pleasure of eating these is getting a little bit of everything in every bite.

I’ve loved scones ever since I first discovered them.  I’m thinking back to growing up in Seattle and going to the Washington State Fair, known locally as “the Puyallup Fair” and waiting in long lines for the scones.  They were plain vanilla sweet scones, warm out of the oven, sliced open and filled with butter and jam.  And they were far smaller than Starbuck’s mondo-sized scones of today.  Everything commercial today seems “super-sized”, and I don’t know about you, but whenever I buy a scone commercially, I can only eat about half of it and then by the next day, the other half is usually dried out.  So, I made these a perfect single serving size.  I call them "minis" but they are goldilocks “just right” in my opinion.

Where Super Seedy Power Scones get their power:  Pumpkin seeds, are a great source of antioxidants, healthy fats, complete protein, magnesium and zinc.  Almonds are also high in antioxidants, vitamin E, protein and fiber.  Hemp hearts (seeds) are incredibly nutritious.  They are rich in healthy fats including omega-3, are a complete protein source, easily digestible, and may support hormone imbalance.  Flaxseeds are loaded with nutrients, including protein, fiber, and omega-3 fatty acids.  They may help reduce inflammation and lower cholesterol, and have cancer-fighting properties.  They are also rich in soluble and insoluble fiber helping promote regularity.  This is especially true of whole flaxseed, whose outer shells are hard to break down, resulting in more ‘passing’ through the digestive system.  Dark chocolate of course is high in antioxidants, but mostly it’s here to make these scones super delicious!

FODMAPs:  Check your yogurt for offending ingredients.  Also, make sure you use a gluten-free flour blend that does not include chickpea or other bean flours.  I use Bob's Redmill 1 to 1 Gluten-Free Baking Flour. The seeds are at amounts that fall into low-FODMAP servings, but combined together, if highly sensitive, may cause overload.  I find Super Seedy Power Scones to be easily digested by my body, but we are all unique.  Know your own body and tolerances, and feel free to exchange or omit any nuts or seeds.
