This Tofu 'Ricotta' is so close to the real thing, you'll wonder why you waited to try it! Vegan, low-fat, full of plant-based protein and a touch of fiber (which animal products contain zero), feel guilt-free using this in sandwiches, wraps, bruschetta (my favorite!), with avocado toast, baked into pasta or lasagne. I haven't tried it on pizza, but I'm guessing it would be excellent.
Tofu 'Ricotta' contains only 6 ingredients and can be made in 5 minutes! You'll want this to become part of your weekly routine. As a base spread for mini toasts, think of all the toppings you can add for a wide variety of bruschetta! Anything from sweet toppings, like sliced strawberries with a drizzle of honey and sprinkled walnuts, or Blueberry Chia Jam, to briny Sun-Dried Tomato Tapenade, or Brazil Nut Pesto, or try it with Beet Pesto.
