Beyond Meat is a wonderful option for those of us who prefer not to consume animal products but still want to dine with meat-eaters. I refer to it as "transition-food." I've never encountered a meat-eater who didn't enjoy it or felt they were missing out on animal flesh. Additionally, the developers at Beyond are continually improving their products to make them healthier, which I appreciate. Although I enjoy preparing meals entirely from scratch, I don't always have the time or energy, and opting for Beyond Meat allows me to add a good amount of protein and flavor to my meals with minimal effort.

This Wellington features convenient shortcuts such as store-bought puff pastry and canned lentils. Puff pastry is often unintentionally vegan, but it's important to check the ingredients since some varieties aren't. For a gluten-free option, there are a few alternatives available, so feel free to experiment! Personally, I haven't tried these alternatives, as I believe this dish deserves the traditional light and flaky pastry layers, even if it means loosening my pants afterward. ;-) Canned lentils contribute body and fiber to the filling, adding extra protein, while balancing the Beyond Meat to make it somewhat more "healthy."




Puff pastry is simpler to handle than it appears. Simply thaw it, roll it out to the needed size, position the Wellington filling in the center to form a 'loaf', cut the edges of the dough, and wrap them around the loaf. Brush with melted vegan butter, then place it on your baking sheet and bake.

Serve on a platter surrounded by seasonal produce as decor. All the traditional side dishes go great with this Vegan Beef Wellington. Don't forget to include mashed potatoes, gravy, cranberry sauce, and something green such as a fresh green salad with shaved fennel, or your favorite brussels sprouts dish.

FODMAPs: Regular wheat-flour puff pastry is not low-FODMAP due to fructan content. Beyond Meat Beef is made mostly from pea protein, which may or may not be low-FODMAP, depending on how it is processed and how much carbohydrate remains from the peas. Lentils are low in FODMAP's up to 1/4 cup. I would not recommend this recipe for those on a strict low-FODMAP diet or elimination phase. However, it can be used in later phases of reintroduction to acclimate back into a full-range diet.
