Indulge in hearty Celebration Quinoa Loaf and reminisce about having meatloaf at Grandma's house (if you did), knowing you can feel great about harming no animals including yourself in the making and consuming of this updated comfort meal. It's incredibly moist and flavorful, full of chopped veggies, quinoa, and tempeh plus all the herbs that scream Thanksgiving: rosemary, sage and thyme! Vegan, gluten-free, and low-FODMAP.

In fact, this makes a perfect centerpiece for a plant-based holiday meal, or any cozy night in, really. My favorite Seattle-based grocery chain, PCC Markets has a fabulous deli and they offer recipes for their dishes online. I've taken their recipe for Quinoa Loaf and updated it by altering instructions for ease, substituting low-FODMAP ingredients, and changing out the herbs to reflect Thanksgiving flavors. The result is still fairly similar to their deli feature.


If you plan to serve this for your holiday, I recommend doubling it up and creating 2 loaves instead of one. One loaf will serve 4-6 people, so plan accordingly. You can fit them both easily on one baking sheet. Serve Celebration Quinoa Loaf with Mashed Potatoes and Parsnips, plus Vegan Gravy, and maybe a side salad. Seriously; filling and delish.

I like to mince my vegetables in a food processor to get a fine texture. Be careful not to overprocess and end up with pure mush. Finely minced veggies match the size and texture of the quinoa well and help create this moist loaf.



Since there are no animals in this recipe, you're already on the health track, but you can be sure you're not missing your protein, either. This loaf is loaded with quinoa, which is full of protein that includes all 9 essential amino acids, plus tempeh, which is a hearty fermented soybean and adds chew to the texture, but also additional protein. Both are also great for a low-FODMAP and gluten-free diet.


I use celery, carrot, and a bit of green onion, along with oyster mushrooms, all of which are low-FODMAP when prepared as instructed.
