Different from my 'cheese' sauces, this Vegan White Jalapeno Sauce is inspired by one of my former local hangouts in the San Diego area, Miguel's Cocina. A great place to meet friends for margaritas and Mexican food, Miguel's automatically brings you a bowl of tortilla chips, salsa, and their famous "Jalapeño White Sauce." Their sauce is obviously not dairy-free, but I have tasted it only to see why my non-vegan friends get so excited about it. It's uber-creamy with a mild chili flavor, and a nice contrast to the typical salsa and chips.
When looking into creating my own vegan version of this sauce, I discovered that Miguel's hands out recipe cards for their sauce, and not only is it not vegan, but it includes chicken stock, so it's not even vegetarian. I've reenacted their recipe with quite a few changes to create a sauce that is just as creamy and indulgent, while also being completely animal-free! My favorite way to enjoy this sauce is for dipping Crispy Baked Tacos into it, but it would be fabulous as an appetizer with chips, for any potluck or on Sunday, watching the game.
