I tend to get fancy with my cookies, combining flavors resulting in treats like Tahini Chocolate Chip Cookies, or Chocolate S’mores Cookies, Iced Oatmeal Cookies, you get the gist. I love to add a twist. But, sometimes tradition is calling. The request is in for classic Chocolate Chip Cookies and this is as close as I could allow myself. I added vegan chocolate gems to the tops because I couldn’t help myself, but these cookies can easily be made entirely with chocolate chips and skip the gems for a truly traditional chocolate chip cookie, that also happens to be vegan and gluten-free.
It's fairly easy to make chocolate chip cookies vegan. And, it isn't that hard to make chocolate chip cookies that are gluten-free. But, I've tried many recipes out there that are both vegan AND gluten-free, and frankly, I've never found a recipe that works. So, after several attempts, I've finally perfected a recipe to mimic the classic homemade chocolate chip cookie, while being both vegan and gluten-free! These have the desired soft and chewy centers, with slightly browned and crispy edges.
Ingredients matter! Especially the fat used. I tried this with Earth Balance cubes and the result was too greasy and the cookies spread too much. They work much better with Miyoko’s vegan butter cubes, which have cashew solids in them, so if low-FODMAP, beware of this ingredient.
The gems on top are totally optional, but aren't they cute? Unreal brand makes my favorite mini dark chocolate coconut bars and they also make these vegan Dark Chocolate Crispy Quinoa Gems. They're SO GOOD on these cookies! (Pretty good on their own, too). I like using mini chocolate chips, so that they're dispersed into every bite. Enjoy Life is my vegan go-to brand.
This is a larger than standard batch, making around 40 standard sized cookies. Cut it in half if you want, but my opinion is, you're already going to the trouble to mix the dough up, so make a big batch! Everyone loves chocolate chip, so they will disappear fast! And if not, you can freeze them in a freezer bag for up to 3 months.
