Now gluten-free and low-FODMAP friends can indulge in moist, bready biscuit-like sweet rolls along with everyone else! Great make-ahead recipe; just freeze in a freezer bag once completely cooled. I love them with Red Wine Cranberry Sauce, or a Chia Jam!
Making a gluten-free bread or roll that's meant to "rise", while living at elevation had me a little worried. Finding really light and lofty breads in Denver is a challenge and even the best bakery breads here just don't have the same lightness that I'm used to from my years living on the coast. Add in the complication of gluten-free flour which is already a challenge for bakers and I had my work cut out for me. Worried for nothing! True, these rolls didn't "puff up" as much as typical dinner rolls, but with the addition of heavy sweet potato puree, the resulting rolls are half dinner roll, half biscuit. Gluten-Free Sweet Potato Rolls are incredibly moist and bready at the same time. They have a bit of sweetness, but not like a dessert.
If you make this recipe at sea level, please let me know if the effect is the same or better than mine! Mine were pretty damn good, but you know, it would be nice to see your bread really rise to three times the original height.
