Off-the-shelf ingredients make these easy, low-hassle and foolproof. I used Kite Hill cream cheese and plain Greek yogurt to minimize additives like thickeners and preservatives. Kite Hill uses almonds as the main ingredient in their dairy-free products, which is great for a low-FODMAP vegan diet.

For the crust, find crispy crunchy vegan and gluten-free cookies. Soft, chewy cookies won't work as well. You can go for graham flavor, or gingersnap also makes a nice flavor to highlight the orange in the cheese filling. Partake brand cookies are available online or at Target. Available at most grocery stores. Press the crust into a mini-muffin pan, no greasing necessary!

These Vegan Mini Orange Cheesecake Bites can be made ahead and frozen until ready to use. Just save the orange marmalade and add to the tops after defrosting. They'll keep up to 3 months frozen.
