It's officially Spring and I've had Cinco de Mayo in my sights! For the entire month of April, I've been releasing new vegan Taco recipes, every Taco Tuesday. When you think of vegan tacos, you might think -- what is that? Beans in a corn tortilla? Not here! Have you tried walnut meat tacos yet? They are really similar to the classic American style tacos made during childhood with ground beef and a packet of taco seasoning. Naturally, these are meat and MSG-free. Have you tried jackfruit tacos? Jackfruit is a fantastic vegan (tree fruit) option with a texture like pulled pork or chicken. It works great in semi-sweet Al Pastor sauce. Or, since Cinco de Mayo falls on a Sunday this year, maybe you want to make breakfast tacos! Filled with a vegan scramble and grilled veggies that you can make ahead, these are great with Chipotle sauce! Last but not least, I had to do something crispy, so I came up with Crispy Tacos de Papa (mashed potatoes inside!). Dip these crunchy tacos into Vegan White Jalapeno Sauce and be delighted in the textures and tastes.
Tacos are nothing without great sauces. I say all the time, "it's all about the sauce!" And, it is! If you're FODMAP sensitive, then you know how hard it is to flavor your food because everything in the stores contains garlic, onions, and/or dairy. Sauces really don't take long to make and store well in the refrigerator (or freezer). My sauces and salsas omit the garlic/onion, and are FULL of flavor for everyone to enjoy!
I've got the tacos covered in Al Pastor sauce, Chipotle Sauce, Pico de Gallo, or try Pineapple Salsa. More toppings or sides to dip chips in are my Vegan Nacho Cheese Sauce or try Vegan White Jalapeno Sauce (so good!).
Cinco de Mayo is not as big a holiday in Mexico as we make it out to be in the U.S, but Mexico is my favorite place to vacation, and part of that (besides the beautiful beaches) is the wonderful Mexican food and drinks. I don't let an opportunity to celebrate Mexican food culture pass me by, so here's my list of recipes available to choose from this year on May 5. Don't skip the Margaritas!
